Ingredients:
- 1 cup arborio rice
- 4 cups chicken broth
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- 1/4 cup dry white wine

Start by heating the chicken broth in a saucepan over low heat. In a separate pot, melt the butter over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
Add the arborio rice to the pot with the onion and garlic. Cook for a few minutes until the rice is lightly toasted. Pour in the white wine and stir until the liquid is absorbed.
Begin adding the chicken broth, one ladleful at a time, stirring constantly until the liquid is absorbed. Continue adding broth and stirring until the rice is cooked to your liking (usually around 20-25 minutes).
Once the rice is cooked, remove the pot from heat and stir in the grated parmesan cheese. Add salt and pepper to taste.
