Short-grain Japanese rice is the best rice to use for Onigiri as it's sticky and holds its shape well when molded. Rinse the rice in cold water a few times until the water runs clear, then drain it and let it sit for 30 minutes in a bowl of water.

While the rice is soaking, mix the rice vinegar, sugar, and salt in a bowl until the sugar and salt have dissolved. This will be used to season the rice.

Instructions:
