Ingredients:
- 1 cup red lentils, rinsed and drained
- 1 can (28 ounces) diced tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth

- 1 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. olive oil
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.
- Add the cumin and paprika, and cook for another minute.
