Delicious Chicken and Sweet Potato Stew Recipe

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 2 large sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 3 cups chicken broth
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes.
  2. Add the onion and garlic to the pot and cook until softened, about 3 minutes.
