Ingredients:
- 1 cup barley
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Start by cooking the barley in a pot with 2 cups of water. Bring the water to a boil, then reduce the heat and let the barley simmer for about 45 minutes, or until it is tender.
While the barley is cooking, heat the olive oil in a large frying pan over medium-high heat. Add the chopped onion, minced garlic, and chopped bell pepper to the pan and sauté for about 5 minutes, or until the vegetables are tender.
Once the vegetables are tender, add the cooked barley to the frying pan and stir well to combine. Add the cumin, chili powder, salt, and pepper to the pan and continue to stir until everything is well mixed.
Cook the mixture for an additional 5-10 minutes, or until the barley is slightly crispy and golden brown. Serve immediately and enjoy!
