Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries

Directions

  1. Preheat oven to 350°F (180°C). Line a 9-inch square baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar with an electric mixer until smooth. Add eggs and vanilla extract, and beat until well combined.
  4. Gently fold in raspberries into the cream cheese mixture. Be careful not to overmix, as this can cause the raspberries to break apart.
  5. Pour the mixture over the graham cracker crust and spread it evenly. Bake for 25-30 minutes, or until the edges are slightly golden and the center is set.
  6. Remove from oven and let cool to room temperature. Once cooled, refrigerate for at least 2 hours or overnight.
  7. Cut into bars and serve. Optional: top with additional raspberries or whipped cream.

Tips

  • Make sure the cream cheese is softened before beating it, as this will help prevent lumps in the mixture.
  • If you don't have fresh raspberries, you can use frozen raspberries instead. Just make sure to thaw them before folding them into the cream cheese mixture.
  • For a stronger raspberry flavor, you can add a few drops of raspberry extract to the cream cheese mixture.
