Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh raspberries
Directions
- Preheat oven to 350°F (180°C). Line a 9-inch square baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and press mixture into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and sugar with an electric mixer until smooth. Add eggs and vanilla extract, and beat until well combined.
- Gently fold in raspberries into the cream cheese mixture. Be careful not to overmix, as this can cause the raspberries to break apart.
- Pour the mixture over the graham cracker crust and spread it evenly. Bake for 25-30 minutes, or until the edges are slightly golden and the center is set.
- Remove from oven and let cool to room temperature. Once cooled, refrigerate for at least 2 hours or overnight.
- Cut into bars and serve. Optional: top with additional raspberries or whipped cream.
