- 2 bundles of buckwheat noodles (naengmyeon)
- 1 cucumber, julienned
- 2 hard-boiled eggs, sliced
- 1/2 cup of sliced beef (optional)
- 2 tablespoons of gochujang sauce
- 1 tablespoon of vinegar
- 1 tablespoon of sugar
- 1 tablespoon of sesame oil
- 1 teaspoon of minced garlic
- 1 teaspoon of sesame seeds
Instructions:
- Bring a pot of water to a boil and cook the buckwheat noodles for 4-5 minutes, stirring occasionally. Drain and rinse the noodles with cold water.
- In a bowl, mix together the gochujang sauce, vinegar, sugar, sesame oil, and minced garlic.
- In another bowl, mix the cooked noodles with the sauce until evenly coated.
- Arrange the noodles in a serving bowl and top with sliced cucumber, boiled egg, and sliced beef (if using).
- Sprinkle sesame seeds on top and serve chilled.
Tips:
- For a vegetarian version, omit the beef and use vegetable broth instead of beef broth to cook the noodles.
- You can also add other vegetables like sliced radish, pear, or lettuce to the dish.
- If you prefer a milder version, use less gochujang sauce or mix it with some water or broth.
