Ingredients:
- 8 oz. cooked pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella cheese, cubed
- 1/2 cup basil pesto
- 1 tbsp. olive oil
- Salt and pepper to taste
Start by cooking the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process. Transfer the pasta to a large bowl.
Add the halved cherry tomatoes to the bowl with the pasta.
Add the cubed mozzarella cheese to the bowl with the pasta and cherry tomatoes.
In a separate bowl, whisk together the basil pesto, olive oil, salt, and pepper. Pour the dressing over the pasta salad and toss to combine.
Cover the pasta salad and refrigerate for at least 30 minutes before serving. This will allow the flavors to meld together and create a delicious and refreshing dish that's perfect for a summer BBQ or potluck.
