  • 1 cup pitted dates, chopped
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract

Start by preheating your oven to 350 degrees F (175 degrees C). In a small bowl, combine the chopped dates, baking soda, and boiling water. Let the mixture sit for 15 minutes, or until the dates have softened.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, making sure to scrape down the sides of the bowl. In a separate bowl, whisk together the flour, baking powder, and salt.
