What is Biscotti?
Biscotti is a classic Italian cookie that is known for its crunchy texture and delicious flavor. The word "biscotti" comes from the Italian word "biscotto," which means "twice-cooked." This refers to the fact that biscotti are baked twice, which gives them their signature crunchiness.
Biscotti are typically made with almonds and flavored with anise or vanilla. They are perfect for dipping in a cup of coffee or tea, and they make a great snack or dessert.
Ingredients:
- 2 cups all-purpose flour- 1 1/2 teaspoons baking powder- 1/4 teaspoon salt- 3/4 cup sugar- 1/2 cup (1 stick) unsalted butter, at room temperature- 2 large eggs- 1 teaspoon vanilla extract- 1 cup slivered almonds
Instructions:
1. Preheat your oven to 350°F.2. In a mixing bowl, combine the flour, baking powder, and salt.3. In a separate bowl, cream together the sugar and butter until light and fluffy.4. Add the eggs and vanilla extract to the sugar-butter mixture and beat until well combined.5. Gradually add the flour mixture to the wet ingredients and mix until just combined.6. Fold in the slivered almonds.7. On a lightly floured surface, shape the dough into two logs, each about 12 inches long and 1 1/2 inches wide.8. Place the logs on a baking sheet lined with parchment paper and bake for 25 minutes, or until lightly golden brown.9. Remove the logs from the oven and let them cool for 10 minutes.10. Use a serrated knife to slice the logs into 1/2-inch thick slices.11. Place the slices back on the baking sheet and bake for an additional 10-15 minutes, or until the biscotti are crisp and golden brown.
Serve the biscotti with a hot cup of coffee or tea and enjoy!
