If you're a sushi lover, you'll definitely want to try making your own sushi rolls at home. Not only is it fun and easy, but you can customize your rolls with your favorite fillings. In this recipe, we'll teach you how to make sushi rolls with avocado, cucumber, and smoked salmon. These rolls are perfect for a quick and healthy lunch or dinner.

To start, you'll need to cook your sushi rice. Rinse 1 cup of sushi rice thoroughly in cold water until the water runs clear. Add the rice and 1 1/4 cups of water to a medium-sized saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water has been absorbed and the rice is tender. Remove from the heat and let the rice cool to room temperature.

While the rice is cooking, prepare your fillings. Thinly slice 1 avocado and 1/2 a cucumber. Cut 4-6 thin slices of smoked salmon. You can also add other fillings like carrots or crab meat if you prefer.

Once the rice has cooled, it's time to assemble your sushi rolls. Lay a sheet of nori seaweed shiny side down on a sushi mat. Wet your hands with cold water and spread about 1/2 cup of rice evenly over the nori, leaving a 1-inch border at the top. Place the avocado, cucumber, and smoked salmon in a line across the middle of the rice.

To roll the sushi, lift the edge of the sushi mat closest to you and roll it forward, pressing gently to keep the filling in place. Continue rolling until the edge of the nori meets the rice border at the top. Press the roll gently to seal it closed. Repeat with the remaining nori and fillings.

Once you've rolled all of your sushi, use a sharp knife to slice each roll into 6-8 pieces. Serve with soy sauce and wasabi for dipping.
