Ingredients:
- 4 boneless, skinless chicken breasts
- 8 oz. egg noodles
- 1/4 cup lemon juice
- 2 tbsp. olive oil
- 1 tsp. black pepper
- 1/2 tsp. salt
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tbsp. chopped fresh parsley
To begin, preheat your oven to 375°F. While the oven is preheating, bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
Next, season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown. Remove the chicken from the skillet and place it in a baking dish.In a small bowl, whisk together the lemon juice, minced garlic, and black pepper. Pour the mixture over the chicken in the baking dish. Bake for 20-25 minutes or until the chicken is cooked through.
To serve, divide the cooked noodles between four plates. Top each plate with a lemon pepper chicken breast. Sprinkle grated Parmesan cheese and chopped fresh parsley over the top of each plate. Enjoy!
