Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 and 1/2 cups fresh blueberries

To start, preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream the softened butter and sugar together with an electric mixer until light and fluffy. Beat in the eggs one at a time and then add in the vanilla extract. Slowly mix in the dry ingredients until well combined.

Gradually add in the milk and continue to mix until the batter is smooth. Finally, gently fold in the fresh blueberries. Use an ice cream scoop to divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy!
