Ingredients:
- 1 pound beef stew meat, cut into small pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 can diced tomatoes
- 6 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Start by heating a large pot over medium-high heat. Add the beef stew meat and cook until browned on all sides, about 5 minutes. Remove the meat from the pot and set it aside.
Add the onion and garlic to the pot and sauté until the onion is translucent, about 3 minutes. Add the carrots and celery and cook for another 5 minutes until the vegetables are slightly tender.
Stir in the can of diced tomatoes and the beef broth, and bring the mixture to a boil. Reduce the heat to low and add the beef stew meat back to the pot. Stir in the thyme, rosemary, salt, and pepper, and let the soup simmer for 45 minutes.
Once the soup is done, serve it hot with some crusty bread on the side. This soup can be stored in the fridge for up to 3 days or frozen for up to 3 months.
