Hungarian Goulash Soup Recipe: Hearty and Flavorful Comfort Food

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons oil
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons sweet paprika
  • 1 tablespoon tomato paste
  • 6 cups beef broth
  • 3 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 2 potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste

Directions:

  1. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef and brown on all sides. Remove the beef and set aside.
  2. Add the onions and garlic to the pot and sauté until the onions are translucent.
  3. Add the sweet paprika and tomato paste and stir to combine.
  4. Add the beef broth, carrots, parsnips, potatoes, red bell pepper, and caraway seeds. Bring to a boil.
