Ingredients:
- 4 medium zucchinis
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked brown rice
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut off the tops of the zucchini and scoop out the insides using a spoon. Keep the shells intact and chop the scooped-out flesh.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft, about 4-5 minutes. Add minced garlic and chopped zucchini flesh and cook for another 3-4 minutes.
- Stir in cooked brown rice, chopped parsley, dill, mint, and crumbled feta cheese. Season with salt and black pepper to taste.
- Stuff the zucchini shells with the rice mixture and place them in a baking dish. Cover with foil and bake for 30 minutes.
