Ingredients:

  • 4 medium zucchinis
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked brown rice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the zucchini and scoop out the insides using a spoon. Keep the shells intact and chop the scooped-out flesh.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft, about 4-5 minutes. Add minced garlic and chopped zucchini flesh and cook for another 3-4 minutes.
  4. Stir in cooked brown rice, chopped parsley, dill, mint, and crumbled feta cheese. Season with salt and black pepper to taste.
  5. Stuff the zucchini shells with the rice mixture and place them in a baking dish. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for another 10-15 minutes or until the zucchinis are tender and the rice is golden brown on top.
  7. Serve hot and enjoy!
