Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup diced fresh strawberries

Instructions:

  1. Preheat your oven to 350°F (180°C). Line a muffin tin with cupcake liners and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add in the eggs, one at a time, beating well after each addition.
  5. Stir in the milk and vanilla extract.
  6. Slowly add in the flour mixture, mixing until just combined.

  • 1-2 tbsp heavy cream
  • Strawberries for decoration
  1. In a large bowl, beat the butter until smooth.
  2. Add in the powdered sugar and vanilla extract, and beat until well combined.
  3. Gradually add in the heavy cream, one tablespoon at a time, until the frosting is smooth and creamy.
  4. Pipe or spread the frosting onto the cooled cupcakes.
  5. Decorate with fresh strawberries and serve.
