Ingredients:

  • 6 large eggs
  • 1 cup granulated sugar
  • 1 cup cake flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup vegetable oil
  • 1/4 cup water

Instructions:

  1. Preheat the oven to 350°F. Grease and flour a 9-inch cake pan.
  2. In a large mixing bowl, beat the eggs and sugar on high speed for 8-10 minutes, or until the mixture is pale, thick, and tripled in volume.
  3. Sift the cake flour, baking powder, and salt into the egg mixture. Gently fold the dry ingredients into the egg mixture until just combined.
  4. Stir in the vanilla extract, vegetable oil, and water until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  1. Bake for 25-30 minutes, or until the cake is golden brown and springs back when touched lightly in the center.
