  • 1/2 cup red lentils, rinsed and drained
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lemon juice
  • 1 cup couscous
  • 1 1/2 cups water

Instructions:
