Ingredients:
- 1 cup basmati rice
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch piece of ginger, grated
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup peas
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp salt
- 2 tbsp oil
- 1/4 cup chopped cilantro
Instructions:
- Wash the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.
- In a large pot, heat the oil over medium heat. Add the onions and sauté until golden brown.
- Add the garlic, ginger, cumin, coriander, turmeric, garam masala, and salt. Sauté for 1-2 minutes.
- Add the bell pepper and zucchini, and sauté for 5-7 minutes or until they are slightly tender.
- Add the peas and sauté for another 2 minutes.
- Add the soaked and drained rice to the pot and stir well to combine. Add 2 cups of water and bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked and the water has been absorbed.
- Remove from heat and let the biryani sit for 5 minutes, then fluff with a fork. Garnish with chopped cilantro.
