Ingredients:
- 1 and 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 and 1/2 cups all-purpose flour
- 1/4 cup unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- Coarse sea salt
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup milk
- 2 tablespoons all-purpose flour
- 2 tablespoons unsalted butter
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine warm water, sugar, and kosher salt. Sprinkle the active dry yeast on top and let it sit for 5 minutes or until the mixture becomes foamy.
- Add the flour and melted butter to the mixing bowl and mix until the dough comes together. Knead the dough for 5 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl and cover with a towel. Let it rise in a warm place for 1 hour until it doubles in size.
- Preheat the oven to 450°F.
- In a large pot, bring 10 cups of water and baking soda to a boil.
- Divide the dough into small pieces and roll each one into a ball. Drop the dough balls into the boiling water for 30 seconds, then remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
- Brush the egg wash on top of each pretzel bite, then sprinkle coarse sea salt on top.
- Bake the pretzel bites in the preheated oven for 12-15 minutes until they are golden brown.
- While the pretzel bites are baking, prepare the cheese dip. In a saucepan, melt the butter and whisk in the flour until it forms a paste. Gradually whisk in the milk until the mixture becomes smooth.
- Add the shredded cheddar and mozzarella cheese to the saucepan and stir until it is melted and combined.
- Season the cheese dip with salt and pepper to taste.
- Serve the warm pretzel bites with the cheese dip on the side for dipping. Enjoy!
