Delicious Homemade Soft Pretzel Bites with Cheese Dip Recipe

Ingredients:

  • 1 and 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 4 and 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Coarse sea salt
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine warm water, sugar, and kosher salt. Sprinkle the active dry yeast on top and let it sit for 5 minutes or until the mixture becomes foamy.
  2. Add the flour and melted butter to the mixing bowl and mix until the dough comes together. Knead the dough for 5 minutes until it becomes smooth and elastic.
  3. Place the dough in a greased bowl and cover with a towel. Let it rise in a warm place for 1 hour until it doubles in size.
  4. Preheat the oven to 450°F.
  5. In a large pot, bring 10 cups of water and baking soda to a boil.
  6. Divide the dough into small pieces and roll each one into a ball. Drop the dough balls into the boiling water for 30 seconds, then remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
  7. Brush the egg wash on top of each pretzel bite, then sprinkle coarse sea salt on top.
  8. Bake the pretzel bites in the preheated oven for 12-15 minutes until they are golden brown.
  9. While the pretzel bites are baking, prepare the cheese dip. In a saucepan, melt the butter and whisk in the flour until it forms a paste. Gradually whisk in the milk until the mixture becomes smooth.
  10. Add the shredded cheddar and mozzarella cheese to the saucepan and stir until it is melted and combined.
  11. Season the cheese dip with salt and pepper to taste.
  12. Serve the warm pretzel bites with the cheese dip on the side for dipping. Enjoy!
