Creamy Mushroom and Beef Stroganoff Soup Recipe

Ingredients:

  • 1 pound beef sirloin steak, cut into thin strips
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 8 ounces sliced mushrooms
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef strips and cook until browned, about 5-7 minutes. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Cook until the onion is translucent, about 3-4 minutes.
  3. Add the Worcestershire sauce and paprika, stirring to combine.
  4. Add the sliced mushrooms and cook until they are tender and have released their moisture, about 5-7 minutes.
  5. Add the beef broth and bring the mixture to a simmer.
  6. In a small bowl, whisk together the sour cream and flour until smooth.
  7. Stir the sour cream mixture into the soup and simmer for an additional 10-15 minutes, stirring occasionally.
  8. Stir in the butter and season with salt and pepper to taste.
  9. Serve hot, garnished with additional sour cream and chopped fresh parsley if desired.
