Ingredients:
- 4 salmon fillets
- 2 tbsp cajun seasoning
- 1 tbsp olive oil
- 1 cup white rice
- 2 cups chicken broth
- 1 can of black beans, rinsed and drained
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- 1 tsp cumin
- 1 lb fresh green beans, trimmed
- 2 tbsp butter
- Salt and pepper to taste
Start by seasoning your salmon fillets with cajun seasoning on both sides. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the salmon fillets to the skillet and cook for about 5-6 minutes on each side or until the salmon is fully cooked and blackened.
While the salmon is cooking, prepare the dirty rice. Rinse the white rice and drain it. In a large saucepan, combine the rice, chicken broth, black beans, garlic powder, onion powder, paprika, and cumin. Bring the mixture to a boil, then reduce heat to low and simmer for about 18-20 minutes or until the rice is fully cooked and the liquid is absorbed.
For the green beans, trim the ends and wash them thoroughly. Melt 2 tbsp of butter in a large skillet over medium heat. Once the butter is melted, add the green beans to the skillet and cook for about 5-6 minutes or until the green beans are tender but still crisp.
Finally, serve the blackened salmon with dirty rice and green beans on a plate. Season with salt and pepper to taste. Enjoy!
