Ingredients:
- 1 cup freshly squeezed lemon juice
- 1/2 cup granulated sugar
- 1/2 cup fresh mint leaves
- 6 cups water
- Ice cubes
Start by combining the sugar and 1 cup of water in a saucepan. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves completely. Remove it from the heat and let it cool.
Next, in a blender, blend the mint leaves with 1 cup of water until they are finely chopped. Strain the mixture through a fine mesh sieve, pressing down on the solids to extract as much liquid as possible.
In a large pitcher, combine the lemon juice, sugar syrup, mint extract and 4 cups of water. Stir well to combine. Add ice cubes to the pitcher and garnish with fresh mint leaves. Serve chilled and enjoy!
