This Roasted Garlic and White Bean Dip with Toasted Pita is the perfect appetizer for any occasion. The creamy and savory dip pairs perfectly with the crispy toasted pita chips, making for a delicious and satisfying snack.

Ingredients

  • 1 whole head of garlic
  • 1 can of white beans, drained and rinsed
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of water
  • 4-6 pita breads, cut into wedges

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Cut off the top of the garlic head to expose the cloves. Drizzle with a little bit of olive oil, and wrap in foil. Roast in the oven for 30-35 minutes, or until the garlic is soft and fragrant.
  3. In a food processor, combine the roasted garlic, white beans, olive oil, lemon juice, salt, and black pepper. Pulse until the mixture is smooth and creamy.
  4. With the food processor running, slowly add in the water until the dip reaches your desired consistency.
