Delicious Beef Empanadas with Chimichurri Sauce Recipe

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup sliced green olives
  • 1 package empanada dough (or you can make your own)
  • 1 egg, beaten
  • 1/4 cup flour

Start by cooking the ground beef in a pan over medium-high heat. Add the chopped onion and minced garlic and cook until the onion is translucent. Add the cumin, paprika, oregano, salt, and black pepper and stir until combined. Add the raisins and sliced green olives and stir until heated through.

Preheat your oven to 375 degrees F. Roll out the empanada dough and cut into circles. Spoon a tablespoon of the beef mixture onto one side of each circle. Fold the dough over to create a half-moon shape and use a fork to crimp the edges closed.

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg and bake for 20-25 minutes, or until golden brown.

Chimichurri Sauce:

  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

To make the chimichurri sauce, combine the parsley, cilantro, garlic, salt, black pepper, and red wine vinegar in a food processor or blender. Pulse until the herbs are finely chopped. With the motor running, slowly pour in the olive oil until the sauce is smooth and well combined.

Serve the beef empanadas hot with a side of chimichurri sauce for dipping. Enjoy!
