Delicious Beef Bourguignon Recipe

Ingredients:

  • 2 pounds beef chuck, cut into 2-inch cubes
  • 6 strips of bacon, cut into small pieces
  • 2 tablespoons all-purpose flour
  • 2 cups red wine (such as Pinot Noir or Burgundy)
  • 2 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 2 bay leaves
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh thyme, chopped
  • 1 pound mushrooms, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 350°F.
  2. In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  3. Season the beef cubes with salt and pepper, then add them to the pot in batches, browning them on all sides. Remove the beef with a slotted spoon and set aside.
  4. Add the onion to the pot and sauté until softened, then add the garlic and cook for another minute.
  5. Sprinkle the flour over the onions and garlic, stirring to coat. Cook for another minute, then add the wine, beef broth, tomato paste, thyme, bay leaves, and the reserved bacon and beef.
  6. Bring the mixture to a simmer, then cover the pot and place it in the preheated oven. Bake for 2 to 3 hours, or until the beef is tender.
  7. While the beef is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown. Season with salt and pepper to taste.
  8. When the beef is tender, remove the pot from the oven and skim any excess fat from the surface. Stir in the cooked mushrooms and serve hot.
