Ingredients:
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 4 tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water
- Coarse salt, for sprinkling
Instructions:
- In a mixing bowl, combine warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for 5 minutes until it's foamy.
- Add flour and melted butter to the mixture and mix with a dough hook attachment for 5 minutes until well combined.
- Transfer the dough to a greased bowl and cover it. Let it rise in a warm place for 1 hour until it doubles in size.
- Preheat the oven to 450°F (230°C).
- Fill a large pot with 10 cups of water and bring it to a boil. Add baking soda and reduce heat to low.
- Divide the dough into 8 equal parts and roll them into a long rope. Twist the ends together and fold them back to the center to form a pretzel shape.
- Place the pretzels in the boiling water for 30 seconds each. Remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.
