Delicious Strawberry Ice Cream Cake Recipe

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 quart strawberry ice cream, softened
  • 1 pint vanilla ice cream, softened
  • 1 1/2 cups fresh strawberries, sliced

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan with cooking spray.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
  3. Press the graham cracker mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, or until lightly golden brown. Remove from the oven and let cool completely.
  4. Once the crust is cool, spread the softened strawberry ice cream evenly over the top of the crust. Cover and freeze for 1 hour.
  5. Remove the cake from the freezer and spread the softened vanilla ice cream over the top of the strawberry ice cream layer. Cover and freeze for another hour.
  6. Top the vanilla ice cream layer with sliced strawberries. Cover and freeze for at least 4 hours, or overnight.
  7. When ready to serve, run a knife around the edge of the pan to loosen the cake. Remove the springform ring and slice the cake into wedges. Serve immediately.
