Ingredients:
- 4 large portobello mushroom caps
- 1/4 cup butter, softened
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
To begin, preheat your grill to medium-high heat. While the grill is heating up, clean the portobello mushroom caps and remove the stems. In a small bowl, mix together the softened butter, minced garlic, chopped parsley, thyme, rosemary, salt, and black pepper. Set aside.
Once the grill is hot, place the mushroom caps on the grill with the gill side facing up. Brush the garlic and herb butter generously over the mushroom caps. Grill for 5-7 minutes, or until the mushrooms are tender and slightly charred.
Remove the mushrooms from the grill and let them cool for a few minutes before serving. These grilled portobello mushrooms with garlic and herb butter are perfect as a side dish or as a vegetarian main course. Enjoy!
