Ingredients:

  • 6 large baking potatoes
  • 2 tablespoons olive oil

  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, sliced

Instructions:

  1. Preheat oven to 400°F.
  2. Wash potatoes and pat dry. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin.

  4. Place the potato skins face-down on a baking sheet and bake for 20-25 minutes, or until crispy and lightly browned.
  5. Remove from the oven and flip the potato skins over. Sprinkle each skin with cheddar cheese, crumbled bacon, and sliced green onions.
  6. Return the potato skins to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a few minutes before serving.
