  • 2 medium-sized eggplants, sliced into 1/4 inch rounds
  • 1 cup flour
  • 2 cups Italian breadcrumbs
  • 1 cup parmesan cheese, grated
  • 3 eggs, beaten
  • 1 jar of marinara sauce
  • 2 cups mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil for grilling

To start, preheat your grill to medium-high heat. While the grill is heating up, prepare the eggplant slices. Sprinkle salt on both sides of the eggplant slices and let them rest for 10 minutes. This helps to remove excess moisture from the eggplant. After 10 minutes, rinse the eggplant slices and pat them dry with a paper towel.
