Ingredients

  • 1 cup of rice
  • 2 cups of water
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups of spinach, chopped
  • 1/4 cup of olive oil
  • 1/4 cup of lemon juice
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic cloves and sauté until the onions are translucent.
  2. Add the rice to the pot and stir to coat the rice in the oil. Cook for 2-3 minutes, stirring occasionally, until the rice is lightly toasted.
