Ingredients:

  • 1 pound of chicken breast, sliced into thin strips
  • 1 pound of penne pasta
  • 1/2 cup of basil pesto
  • 1/2 cup of heavy cream
  • 1/2 cup of chicken broth
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of Parmesan cheese, grated

Instructions:

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Season chicken strips with salt and pepper. Heat a large skillet over medium-high heat and add olive oil. Add chicken and cook until no longer pink, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Add chicken broth and scrape up any brown bits from the bottom of the pan. Bring to a simmer and let reduce for about 3-5 minutes.
  4. Add in basil pesto and heavy cream, whisking until well combined. Let sauce simmer for about 2-3 minutes until it thickens up a bit.
  5. Add cooked pasta and chicken strips back into the skillet with the sauce. Toss everything together until well coated in the creamy pesto sauce.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Serve immediately and enjoy!
