Ingredients:

  • 1 lb. wide rice noodles
  • 2 tbsp. vegetable oil
  • 3 cloves garlic, minced
  • 1 lb. chicken breast, sliced into thin strips (optional)
  • 3 eggs, beaten
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup soy sauce
  • 1/4 cup oyster sauce
  • 1 tsp. sugar
  • 1/4 tsp. black pepper

Start by soaking the rice noodles in hot water for about 10 minutes, or until they are soft and pliable. Drain and set aside.
