Ingredients:

  • 3 medium zucchinis, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they are tender and fragrant.
  2. Add the chopped zucchini to the pot, and sauté for 5-7 minutes until the zucchini is tender.
