Caramelized Onion and Goat Cheese Crostini Recipe

Ingredients:

  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 1 baguette, sliced diagonally into 1/2-inch thick pieces
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

To start, heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook for about 20 minutes, stirring occasionally, until they are caramelized and golden brown. Add the brown sugar and balsamic vinegar and continue to cook for another 5 minutes until the onions are coated and sticky.

While the onions are cooking, preheat your oven to 375°F. Place the sliced baguette pieces on a baking sheet and brush with olive oil. Bake for 5-7 minutes until the bread is lightly toasted.

To assemble the crostini, spread a generous amount of goat cheese on each toasted baguette slice. Top with a spoonful of caramelized onions and sprinkle with chopped parsley. Season with salt and pepper to taste.
