Ingredients:
- 1 cup of grits
- 2 cups of water
- 2 cups of milk
- 1/2 cup of shredded cheddar cheese
- 1/4 cup of butter
- 1/2 pound of andouille sausage, sliced
- 1 pound of shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of Cajun seasoning
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- In a large pot, bring the water and milk to a boil. Slowly whisk in the grits and reduce the heat to low. Cook the grits, stirring occasionally, for 20-25 minutes or until they are creamy and tender. Stir in the butter and cheddar cheese until melted and combined. Keep warm.
