Ingredients:

  • 1 cup of grits
  • 2 cups of water
  • 2 cups of milk
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of butter
  • 1/2 pound of andouille sausage, sliced
  • 1 pound of shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of Cajun seasoning
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, bring the water and milk to a boil. Slowly whisk in the grits and reduce the heat to low. Cook the grits, stirring occasionally, for 20-25 minutes or until they are creamy and tender. Stir in the butter and cheddar cheese until melted and combined. Keep warm.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced andouille sausage and cook for 5-7 minutes, stirring occasionally, until browned and crispy. Remove the sausage from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly charred. Add the minced garlic and Cajun seasoning and cook for an additional minute until fragrant.
  4. Add the peeled and deveined shrimp to the skillet and cook for 2-3 minutes or until pink and cooked through. Add the cooked andouille sausage back to the skillet and stir to combine.
  5. To serve, spoon the creamy grits onto a plate and top with the shrimp and sausage mixture. Garnish with chopped parsley and serve hot.
