Ingredients:
- 1 cup of long-grain white rice
- 1 tablespoon of olive oil
- 1 can (8 ounces) of tomato sauce
- 1 3/4 cup of chicken broth
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 1 can (15 ounces) of black beans, drained and rinsed
- 1 avocado, sliced
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add rice and stir until lightly toasted, about 2-3 minutes.
- Add tomato sauce, chicken broth, cumin, chili powder, garlic powder, salt, and pepper to the saucepan. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low and cover the saucepan with a tight-fitting lid. Cook for 18-20 minutes, or until rice is tender and all the liquid is absorbed.
- Remove the saucepan from heat and let sit for 5 minutes.
- Fluff the rice with a fork and serve with black beans and sliced avocado.
