Ingredients:
- 1 cup basmati rice, washed and soaked for 30 minutes
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit
- 1 carrot, diced
- 1/2 cup green beans, chopped
- 1/2 cup green peas
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 2 cups water
- Salt to taste
- Fresh cilantro, chopped for garnish
1. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and fry until they start to sizzle.
2. Add sliced onion, ginger-garlic paste, and green chili. Sauté for a few minutes until the onion turns translucent.
3. Add diced carrot, chopped green beans, and green peas. Sauté for 2-3 minutes until vegetables are slightly tender.
4. Add turmeric powder, coriander powder, red chili powder, and garam masala powder. Stir well and cook for a minute until fragrant.
5. Drain the water from the soaked basmati rice and add it to the pot. Stir well to coat the rice with the spice mixture.
6. Add 2 cups of water and salt to taste. Stir well and bring the mixture to a boil.
7. Reduce the heat to low, cover the pot with a lid, and let the rice cook for 15-20 minutes or until all the water is absorbed and the rice is fluffy.
8. Once the rice is cooked, turn off the heat and let it sit covered for 5 minutes.
9. Garnish with fresh cilantro and serve hot.
