To make the spice mixture, combine the bay leaves, cardamom pods, cloves, cinnamon stick, cumin seeds, coriander powder, turmeric powder, and red chili powder in a bowl.

Directions:

  1. Rinse the rice in cold water until the water runs clear, then soak the rice in cold water for 30 minutes.
  2. Heat 2 tablespoons of oil in a large pot over medium heat. Add the onions and cook until golden brown, stirring frequently.

  10. Fluff the rice with a fork and serve hot.
