Lemon Garlic Shrimp and Vegetable Linguine Recipe

Ingredients:

  • 1 pound linguine
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove from skillet and set aside.
  4. Add red and yellow bell peppers and zucchini to the skillet and cook until tender, about 5-7 minutes.
  5. Add cherry tomatoes to the skillet and cook for an additional 2-3 minutes.
  6. Return shrimp to the skillet and add cooked linguine, lemon juice, lemon zest, and chopped parsley. Toss to combine.
  7. Season with salt and pepper to taste.
