Ingredients:
- 1 pound linguine
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions:
- Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove from skillet and set aside.
- Add red and yellow bell peppers and zucchini to the skillet and cook until tender, about 5-7 minutes.
- Add cherry tomatoes to the skillet and cook for an additional 2-3 minutes.
- Return shrimp to the skillet and add cooked linguine, lemon juice, lemon zest, and chopped parsley. Toss to combine.
