- 4 cups pitted fresh cherries

To make the crust, combine the flour and salt in a large bowl. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Add the ice water one tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions, wrap in plastic wrap, and chill for at least 30 minutes.
