Creamy Vegetable and Lentil Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 cup chopped kale
  • 1/2 cup heavy cream

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent.
  3. Add the carrots and celery and cook for another 5 minutes.
  4. Add the thyme, salt, and black pepper and stir to combine.
  5. Add the lentils and vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes or until the lentils are tender.
  7. Add the chopped kale and cook for another 5 minutes.
  8. Remove from heat and let cool for a bit.
  9. Using an immersion blender, puree the soup until smooth.
  10. Stir in the heavy cream and reheat if necessary.
