  • 4 cups chicken broth

  • 1 tsp. thyme
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tbsp. olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5 minutes. Remove chicken from pot and set aside.
  2. Add onions and mushrooms to the pot and sauté until softened, about 5 minutes. Add garlic and cook for an additional minute.
  3. Return chicken to the pot and add chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add heavy cream and simmer for an additional 5 minutes.
