Ingredients:
- 1 lb. boneless, skinless chicken breasts, diced
- 8 oz. mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp. thyme
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 tbsp. olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5 minutes. Remove chicken from pot and set aside.
- Add onions and mushrooms to the pot and sauté until softened, about 5 minutes. Add garlic and cook for an additional minute.
- Return chicken to the pot and add chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
