Ingredients:

  • 2 large eggplants
  • 2 cloves of garlic, minced
  • 1/4 cup of tahini paste
  • 1/4 cup of freshly squeezed lemon juice
  • 1/4 cup of olive oil
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of paprika
  • Fresh parsley or mint for garnish

To start, preheat your grill to medium-high heat. Cut the eggplants in half lengthwise and brush the cut side with olive oil. Place the eggplants cut-side down on the grill and cook for about 10-15 minutes, or until the skin is charred and the flesh is soft.

Once the eggplants are cooked, remove them from the grill and let them cool for a few minutes. Then, scoop out the flesh and place it in a bowl. Add the minced garlic, tahini paste, lemon juice, olive oil, salt, cumin, and paprika. Mix well until all the ingredients are combined.
