Ingredients:
- 2 packs of Ramen noodles
- 4 cups of water
- 1/2 cup of chopped green onions
- 2 tablespoons of soy sauce
- 2 teaspoons of sesame oil
- 1 teaspoon of minced garlic
- 1/2 teaspoon of grated ginger
- 2 boiled eggs
- 1/2 cup of sliced mushrooms
- 1/2 cup of shredded carrots
Instructions:
- Boil water in a pot and add the ramen noodles. Cook for about 3 minutes or until the noodles are soft. Drain the water and set the noodles aside.
- In a pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger and stir for about 30 seconds.
- Add the sliced mushrooms and shredded carrots to the pan and stir for about 2-3 minutes until they are tender.
- Add the cooked ramen noodles to the pan and stir to combine with the vegetables.
- Stir in the green onions, soy sauce and mix well.
- Serve the ramen noodles in a bowl and top with sliced boiled eggs.
