Ingredients:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • 24 mini taco shells

Instructions:

  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking up any clumps with a wooden spoon.
  3. Add garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and black pepper to the skillet. Stir to combine.
  4. Add diced tomatoes and onion to the skillet. Cook until the onions are translucent.
  5. Remove the skillet from heat and stir in shredded cheddar cheese until melted.
  6. Place mini taco shells on a baking sheet and fill each one with a spoonful of the ground beef and cheese mixture.
  7. Bake in the preheated oven for 5-7 minutes or until the cheese is melted and the shells are crispy.
  8. Remove from the oven and let cool for a few minutes before serving.
