Plus, they're easy to make and can be prepared in advance, making them the perfect party food.

Ingredients:

  • 1 pound fresh spinach, washed and chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup olive oil
  • 16 sheets phyllo dough
  • 1/4 cup melted butter

For the filling, start by washing and chopping a pound of fresh spinach. In a large bowl, combine the chopped spinach with crumbled feta cheese, chopped fresh dill and parsley, chopped green onions, minced garlic, salt, pepper, and olive oil. Mix well to combine.

To assemble the spanakopita triangles, take one sheet of phyllo dough and brush it lightly with melted butter. Place another sheet of phyllo dough on top and brush with butter again. Cut the layered phyllo dough into four equal squares. Place a tablespoon of the spinach and feta filling in the center of each square. Fold the square in half diagonally to form a triangle. Continue folding the triangle over itself until you reach the end of the phyllo dough. Brush the top of the triangle with melted butter and place on a baking sheet. Repeat with the remaining phyllo dough and filling.

Bake the spanakopita triangles in a preheated 375-degree oven for 20-25 minutes or until golden brown and crispy. Serve warm or at room temperature with a dollop of tzatziki sauce, if desired.
