Ingredients:
- 1 cup wild rice
- 2 cups water
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- Rinse the wild rice in cold water and drain.
- In a medium saucepan, bring the water to a boil over high heat. Add the wild rice, reduce the heat to low, and cover. Cook until the rice is tender and the water is absorbed, about 45-50 minutes.
- While the rice is cooking, mix together the olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl to make the dressing.
- Once the rice is cooked, fluff it with a fork and transfer it to a large bowl.
